MUSHROOM PULAO

INGREDIENTS:

2 cups basmati rice 1 cup mushrooms

2 potatoes, ¼ cup green peas 1 medium onion –

2 tsp ginger - garlic paste 1 tsp garam masala, 1 tsp coriander powder, ¼ cup finely chopped coriander leaves, 2 tbsp beaten curd ¼ cup desi ghee

Salt to taste

SPICES: 1 whole red chilly, 1 bay leaf, 4 cloves 1”x1 cinnamon stick, cardamom - 2 1 tsp jeera 1 tbsp shahi jeera

METHOD:

1. Heat desi ghee in a pan, add jeera and shahi jeera, bay leaf, let it splutter add all the spices one by one cook for few minutes, add coriander leaves and fry for a while 2 Add chopped onions, ginger-garlic paste, garam masala, coriander powder, salt, when onions turn golden brown, add potatoes, mushrooms, green Pease and cover with lid. 3 Let the mushrooms cook in its own water (add little quantity of water if required). 4 When mushrooms gets half cooked, add curd and stir it, cook for some time, add enough quantity of water to cook rice, aloe it to boil, add rice and cook till it is done. 5 Serve hot with raita, chutney and salads.
