Here are some useful tips to help making cooking easy
1 To sweeten sour curd, whisk it in some fresh milk.
2 To make crispy pakodas, add a tablespoon of hot cooking oil to the gram flour batter and stir well before frying.
3 After rice is boiled, strain off the water and use it in soups and gravies. The residue is extremely nourishing.
4 When you soak rice and urad dal for idly and dosa, wash everything thoroughly before soaking. Later use the soaked water while grinding. If you wash rice and dal after soaking you will lose most of the vitamins.
5 Excess salts in any dish can be brought down by adding diced potatoes, tomatoes or a teaspoon of sugar.
6 Do no add t salt to meat before you cook it? Always add little salt to the meat halfway through cooking. Then taste the meat when it is done and then add salt if needed.
7 To avoid sticky rice, soak washed rice in water for at least ten minutes before cooking. A teaspoon of oil can be added to get separate grains of cooked rice.
8 While make any deep fried dish, if the hot oil starts foaming and rises in the pan, add a small piece of tamarind to the oil. This will prevent foaming and spill over.
9 To get rid of tears while cutting the onion, chill it in refrigerator before cutting. Another way to avoid tears is to soak peeled onion in water before cutting.
10 To get crisp, golden dosa add a teaspoon of fenugreek seeds to the urad dal and grind it.
11 Add a pinch of sugar while cooking any green leaf vegetables. This will help maintain the bright green color.
