VEGE CHANA DAL CURRY

INGREDIENTS
1 cup chana dal washed and soaked in water for 1 hr
1”x2 long ginger finely chopped
6-8 garlic cloves finely chopped
1 onion finely chopped, 2 onions finely diced
¼ desi ghee or cup oil
3-4 green chilies finely chopped
½ tsp each of dhania, jeera, red chilly and turmeric powder,
1 tsp garam masala (all blended together)
A bunch of coriander leaves finely chopped
VEGETABLES
Gajar (Carrot), torai (Rigged gourd)
Spring onion shoots, Palak sag (Spinach)
PREPARATION
1 Cook chana dal with water till almost done, see it is never over cooked.
2 Cut carrot and boil it, keep aside, cut the reaming vegetables and keep aside
METHOD:
1 Heat desi ghee in a pan, add garlic cloves let it splutter, add onion and cook till it is tender (light brown), add ginger, green chilies and mixture of the blended masala, cook for some time
2 Now add dal and all the vegetables, cook till the dal and vegetables are done, add finely diced tomatoes and cook for few minutes
3 Garnish with coriander leaves and serve hot with Butter Nan, Tandoor Roti.
